Ingredients
    Main Ingredients
  • 1 lb fully- cooked frozen mussels (thawed)
  • 1 small onion (diced )
  • 5-6 garlic cloves (sliced )
  • 1 tbsp fresh basil (chopped)
  • 1 cup parmesan cheese (grated )
  • 1 tbsp fresh oregano
  • 15 oz tomato sauce
  • 14.5 oz italian style diced tomatoes
  • 1 cup dry white wine
  • 1 tbsp olive oil
  • 1 bell pepper (diced )
  • Seasonings/ Spices
  • 1 tbsp dried parsley
  • 1 tbsp italian seasoning
  • 1/2 tsp seasoning salt
  • 1/2 tsp red crushed pepper
  • 1/2 tsp ground black pepper
  • 1-2 dash cayenne pepper
Instructions
  1. In a deep skillet over medium- high heat add oil, bell peppers, onions, cayenne pepper and garlic. Sauté for 5 minutes or until onions are translucent.
  2. Add tomatoes, tomato sauce, and wine. Stir. Allow to cook for 5 minutes or until the sauce boils.
  3. Reduce heat to medium- low. Add spices, herbs,½ cup of cheese, and mussels. Cover and allow to cook until mussels are warmed, approximately 5- 7 minutes. Stir occasionally to prevent cheese from sticking to the bottom of the pan.
  4. Once done, remove from heat and sprinkle with additional cheese. Serve hot as an appetizer or atop pasta as an entrée. Serves 3-4 people
