Today, I looked at the calendar and had an unnerving realization, summer is quickly coming to an end. Naturally, like any normal foodie, I’ve been working around the clock to fit in my fav summertime recipes before the sunny season gets away from me. The first thing that pops into my mind when I think of summer is fresh and vibrant fruit. One of my favorite fruit topped recipes is my sweet no-bake fruit tart. This light and fluffy dessert is the perfect finale to a fulfilling dinner with family or friends.
The biggest component of this recipe actually is not fruit, it’s the fruit tart filling. The primary ingredients of our filling are cream cheese, whipped cream, and powdered sugar. One pro tip that I can not stress enough is room temperature ingredients. When whipping cold ingredients, especially cream cheese, with dry ingredients you’ll get a clumpy end product. It has totally happened to me and I was not a happy camper. While it will taste just as good, the appearance and overall aesthetic may take a bit of a hit due to the lumps. To get a nice and smooth filling allow your cream cheese and whipped cream to sit out for roughly 3 hours before mixing.
I would recommend using an electric mixer to mix your ingredients. Mixing cream cheese by hand is possible but requires a bit of elbow grease. If whisking by hand, plan to mix for roughly 5 minutes to get that desired smooth and creamy texture. This recipe also calls for a graham cracker pie crust. For this particular occasion, I used store-bought but I honestly prefer my homemade graham cracker crust.
The fruit
Fresh fruit is a must for this dessert. I love using strawberries, raspberries, and blackberries but this dessert would be just as amazing with kiwi, apricots, and blueberries. In short, you can get creative with your fruit toppings. You want to select fruits that work harmoniously with each other but also deliver that vibrant color that’s expected with fruit tarts. I tend to add a few edible flowers to give it that extra pizzazz.
I served my no-bake fruit tart at my grandma’s retirement dinner and my family absolutely loved it. In fact, my mother and sister-in-law have requested my fruit tart for their birthday instead of traditional birthday cakes. What a compliment, huh?
This fruit tart pairs perfectly with a glass of chilled sweet wine. I would shy away from Moscato’s because they tend to be a bit too sweet but a Sweet White wine blend or White Zinfandel should be perfect!

- Wash fruit. Halve the larger fruits such as strawberries. Set aside.
- In an electric mixer, on medium-low speed mix the room temperature cream cheese for roughly 3- 5 or until fluffy.
- Gradually mix in whipped cream and vanilla extract.
- Slowly mix in powdered sugar and cinnamon. Mix until smooth.
- Pour cream cheese mixture into the graham cracker pie crust. Smooth until evenly dispersed.
- Top mixture with halved strawberries, whole blueberries, and raspberries
