It’s summertime so you know what that means, bring out the grill! Here is a simple yet flavorful salmon recipe you can use on your indoor or outdoor grill. You don’t need a group to get the grill going, this recipe is made for one but can easily be converted to feed a large party.
How to Serve Grilled Fiesta Salmon
I like topping this spicy salmon with my homemade chilled mango and corn salsa. The sweetness from the mango and crispness from the corn adds a bit of complexity to the dish that you will absolutely love! Serve alongside long grain rice, seasoned black beans, and grilled bell peppers for a perfect pairing.
Wine pairing for Grilled Fiesta Salmon
With this lime-heavy light protein, I would pair this dish with a citrusy white wine. One great pairing would be Sauvignon Blanc. The citrus in the wine would nicely complement the citrus of the salmon. Alternatively, we could pair based more on the region of some of these fun flavors and pair with a spanish wine, Verdejo. Verdejo is light bodied and has some of the same dominant citrus flavors as Sauvignon Blanc. I have noticed that when I pair Verdejo with dishes that have a bit of kick to it, it really brings out those spicy flavors. Verdejo will really make the chili in this dish shine.

- In a small bowl, mix 1 tsp chili-lime seasoning powder, 1 tsp paprika, 1 tsp garlic powder, 1/2 tsp cumin, lemon zest, and 1/2 tsp seasoning salt. Set aside.
- Squeeze the juice of half of the lime onto 1/2 pound of skinless salmon. Pat dry with clean paper towel.
- Sprinkle the seasoning mixture on both sides of the salmon until evenly coated. Gentle pat the seasonings on the salmon creating a dry rub.
- Place salmon on a lightly oiled grill over high heat. Grill for approximately 6-8 minutes or until salmon is flaky and no longer bright pink. Serve hot.
- Optional: Top with mango and corn salsa and serve alongside rice and grilled vegetables.
