Instant Pot Red Wine Braised Short Ribs

Looking for the perfect cozy meal for your Fall and Winter nights? Look no further than my Red Wine Braised Short Rips recipe. This recipe is fancy enough for a holiday dinner but requires little leg work to get a restaurant-quality meal. 

What kind of red wine should I use for braised short ribs?

You will want to choose a dry, full-bodied,  red wine for this dish. I typically use Cabernet Sauvignon but a Merlot or Pinot Noir would also work well for this dish. The wine does not have to be expensive but you should select a wine that is drinkable. 

Why should I use an instant pot for short ribs?

Using an instant pot for short ribs is a total time saver without foregoing the low and slow taste. Traditional short ribs cooked stovetop or oven-baked can take hours. The extended cooking time for traditional cooking methods requires a lot of ahead planning and prepping. With the instant pot, as long as I have all the ingredients I need, I can start my meal right after work and eat soon after. 

Can you make red wine braised short ribs stovetop?

You sure can. You would follow the same order of steps and measurements as listed in the instant pot recipe with a few key changes in the cooking method.   In a dutch oven or thick stock pot, add 1 tbsp. oil over high heat. Once the pot is heated, add floured short ribs and brown, approximately 2-3  minutes, on each side. Set short ribs aside. In the same pot, add the remaining oil and saute carrots, onions, and celery until the onions are translucent and browned. Heat may need to be reduced to medium heat if you find vegetables are cooking too fast.  Once vegetables are browned, continue with steps 5-8 as outlined in the original recipe. Once all ingredients are added to the pot, increase heat to medium-high and allow the mixture to boil. As soon as the mixture begins to boil, reduce the heat down to a simmer. Cover and allow to simmer for 3 ½ hours or until meat is tender and begins to fall off the bone. Optional: Cook for additional  5-10 minutes uncovered over medium-high heat for a thicker braise before serving. 

What side dishes should I eat with red wine braised short ribs?

I love serving my short ribs with my garlic-parmesan mashed potatoes and roasted asparagus or broccolini. This recipe would also be great with white rice, mac and cheese, or sauteed spinach. 

Wine pairings for red wine braised short ribs?

The best part of cooking with wine is that the wine pairing is a no-brainer. Pair your dish with the same wine that you used to make the short ribs. Since this dish is red meat-based and bursting with a robust herby flavor,  a medium- to full-bodied red wine would be the best pairing.

  • With a clean paper towel, pat each side of the short ribs dry.
  • Generously season short ribs with salt and ground black pepper. Dust short ribs with flour then set aside.
  • On the instant pot, press brown/saute, set temperature to HIGH, then press start/stop. Add 1 tbsp. of oil to the cooking pot and allow to preheat. Add short ribs and brown on each side for 4-5 minutes. May need to brown in batches to avoid overcrowding
  • Remove browned short ribs from the cooking pot and set aside.
  • Add the remaining oil to the cooking pot. Add onions, carrots, and celery to the cooking pot and allow to saute for 5-8 minutes or until the onions are translucent.
  • Add garlic and remaining flour. Saute for 2-3 minutes.
  • Add tomato paste and cook for an additional 2 minutes. Stir often.
  • Press Start/ stop. Add remaining salt and pepper, wine, 2 cups beef broth, browned short ribs, fresh herbs, and paprika to the cooking pot. Short ribs should be completely covered by liquid. Add an additional cup of beef broth if needed.
  • Secure the lid. Press Meat/ Stew, set the pressure to high, and adjust the time to 50 minutes. Make sure the steam release valve is in the closed position. Press start/stop
  • Once pressure is released, wait 5-8 minutes before removing the lid. Enjoy short ribs hot.
