Parmesan Garlic Mashed Potatoes

I eat a ton of potatoes. Seriously, at least once a week I am eating a potato in one form or another. Whether it’s breakfast, lunch, or dinner I can pretty much whip up a potato recipe for any occasion. Needless to say, with so many potatoes recipes sometimes I can’t decide on which one to make. This week I was torn between my parmesan garlic mashed potatoes or my loaded mashed potatoes, so I took to social media and let my CWC audience vote. The votes came rolling in and my parmesan garlic mashed potatoes took the lead. My CWC audience is truly the best! Their choice went perfectly with the fried chicken, mac and cheese, and spicy cabbage that I prepared.

My one-pot parmesan garlic mashed potatoes are easy to make, flavorful, and will stand up to any main dish or entrée. When mashing potatoes, I tend to use Russet potatoes but Yukon potatoes are also a great alternative. They are both pretty high in starch which makes them great for mashing and will result in fluffy and smooth potatoes. To jam pack my potatoes with garlicky flavor, I add all of my garlic cloves, peeled and whole, directly to the pot with the boiling potatoes. By the time the potatoes are tender enough for mashing, so are the garlic cloves.  After draining the potatoes, I mash the potatoes and garlic, then continue to add the other remaining ingredients.

I boil my potatoes with both water and chicken broth. I find that the chicken broth adds a nice subtle flavor to the potatoes that really brings out the garlic and the parmesan cheese. This recipe calls for freshly shredded parmesan cheese but grated would work just as well. As long as the cheese is fresh and not dried, you can use any parmesan cheese you have on hand or on sale.

This side dish is perfect alongside most chicken, pork, steak, or beef main dishes. It adds the perfect touch to a comfort food dinner with friends or family.

  • In a large pot add cubed potatoes and whole garlic. Add enough water to partially cover the potatoes.
  • Add chicken broth to the pot. If potatoes are not completely covered by water and chicken broth mixture, add more water until the potatoes are completely covered.
  • Pour salt into the pot. Cook over high heat for 20 minutes or until the potatoes are fork-tender.
  • Once potatoes a tender, drain the liquid out of the pot using a colander.
  • Add milk, sour cream, and cheese to the potatoes. Using a potatoes masher, mash the potatoes and the added ingredients.
  • Once potatoes are mashed to your preference, add seasoned salt and parsley. Add black ground pepper to taste. Stir.
  • Serve warm and enjoy.
