My Roasted Tomato Bisque with Smoked Cajun Sausage recipe is sure to give you the nostalgic feel with a modern, and adult-like, twist. Homemade soup using fresh tomatoes and aromatic herbs really set this mid-day dish apart from the condensed canned soup we’ve probably all tried as kids. Well hold on to your hats folks, this ain’t ya mama’s microwaved soup. We’re making tomato soup…but making it grown-ish (queues mischievous laugh).
This recipe is very simple to make. Simply roast the vegetables, add to a pot of chicken broth, blend with a hand mixer, add a splash of cream, and you’re all set!
What’s the difference between tomato bisque and tomato soup?
The two soups are very similar. Both soups contain blended tomatoes and broth; however, the addition of dairy sets them apart. Tomato soup primarily contains tomatoes and broth while tomato bisque contains tomatoes, broth, and the addition of either milk or cream resulting in a creamier soup. I like to use roughly ½ cup of heavy cream but feel free to reduce per your individual preference.
What Type of Tomatoes Can You use for Tomato Soup?
You can honestly use whatever tomatoes you have on hand. I generally use beefsteak tomatoes because they are easy to find, and their large size requires less individual cutting on my end. Feel free to use any type of tomatoes you like.
Do You Have to Use A Hand Mixer?
Absolutely not. I prefer to use a hand mixer because it allows me to blend my roasted vegetables directly in the pot; however, If you don’t have a hand mixer handy a standing mixer would work just as well. As an alternative to blending your ingredients in the pot, transfer the roasted ingredients to the standing mixer instead. Gradually use the pulse setting until tomatoes are blended to desired preference. Pour blended ingredients into the pot with chicken broth.
Can You Use Other Meats Beside Cajun Andouille Sausage?
You sure can! You can switch up the meat or completely skip the meat for a vegetarian-friendly option. Feel free to switch out the andouille sausage for bacon, Italian sausage, chicken, or whatever meat selection you’d prefer!
What to Serve with Tomato Bisque?
I love serving my tomato bisque with parmesan grilled cheese sandwiches, seriously yum! Cheezit, crotons, sprinkled with shredded cheese, or with thick toasted bread are also good pairings/toppings. You can get as creative as you like.
Wine Pairing Recommendations
Wines that pair well with tomato bisque are medium-bodied red wines like Merlots or Chianti. If you’re cruising for white wine, try Sauvignon Blanc. These dry wines have rich flavors but are not too bold that they overpower your soup. My go-to is absolutely a nice earthy glass of Merlot.

- Preheat oven to 450.
- In an oven-safe dish, place tomatoes, onions, garlic, bell peppers, and fresh herbs. Drizzle with olive oil and lightly toss to ensure vegetables and herbs are covered with oil.
- Bake vegetables for 20-25 minutes until onions and bell peppers are tender and tomatoes are soft to touch.
- Once vegetables are cooked to desired doneness, set aside.
- In a large pot over medium-high heat, add chopped sausage. Cook for approximately 2 minutes or until sausage is lightly charred.
- Add chicken broth and allow to cook until broth begins to boil.
- If using a hand mixer: Remove pot from heat. Add roasted tomatoes, fresh herbs, onions, bell pepper, and garlic to the chicken broth pot. Using a hand mixer, place hand mixer over each tomato half and blend until each tomato is no longer whole. For easier blending, try to avoid blending the chopped meat.
- If using a standing mixer: Add roasted tomatoes, fresh herbs, onions, bell pepper, and garlic to a standing blender. Gradually use the pulse setting until tomatoes are blended to desired preference. Pour blended ingredients into the pot with chicken broth.
- Bring blended tomato mixture to a boil. Add dried herbs and cream.
- Allow to simmer until mixture returns to a boil.
- Serve hot, enjoy!
