Spicy Sausage and Sweet Potato Soup

       Am I the only person that lets the weather determine the menu? I had every intention of making pasta for dinner then, BAM, here comes the rain.   Almost immediately, pasta was out, and soup was in. But what kind of soup? Making a grocery run was out of the question, so if the ingredients weren’t in the house, the soup wasn’t getting made. I did a quick recipe search of some of the main ingredients I had on hand and stumbled upon sausage and sweet potato soup. In all my years, I have NEVER tried a soup that called for sweet potatoes. The combination of ingredients caught my attention.

After gathering my main ingredients, my brain was flooded with thoughts of vegetables and spices that would be complimentary.  Thirty minutes later, I was sitting in front of a steaming bowl of soup speechless. The sweetness from the potatoes, the spiciness from the sausages, and the saltiness from the broth blended in a way that blew my mind! It was beyond delicious!

This soup will easily become one of your favorites. Aside from being tasty, this recipe was easy and rather quick to make. Like any soup heavy with vegetables, allot roughly 10 minutes to dice and chop your veggies. If you are unable to find ground Italian sausage, feel free to buy fresh Italian sausage links. Be sure to remove them from their casing before cooking.

 

 Have some other vegetables on hand that you want to try out? Give it a whirl! I totally think this is one of those soups that has a lot of wiggle room. Don’t have spinach? Try Kale. Have some celery on hand? Toss it in. I paired this soup with a ripe Chardonnay that brought out a refreshing and playful flavor. The sweetness of the wine paired with the sweetness of the potato was a match made in…kitchen.

  • In a large pot, cook Italian sausage over medium-high heat until browned.
  • Add onion, bell pepper, garlic, and tomato. Cook for 5 minutes.
  • Add sweet potatoes, chicken broth, water, and seasonings. Cook until soup starts to boil, then reduce heat to low.
  • Cover and allow soup to cook on low heat for 20-25 minutes or until potatoes are tender.
  • Add spinach, stir, and allow to simmer for an additional 5 minutes.
  • Serve hot and enjoy!
