- In a deep skillet over medium- high heat add oil, bell peppers, onions, cayenne pepper and garlic. Sauté for 5 minutes or until onions are translucent.
- Add tomatoes, tomato sauce, and wine. Stir. Allow to cook for 5 minutes or until the sauce boils.
- Reduce heat to medium- low. Add spices, herbs,½ cup of cheese, and mussels. Cover and allow to cook until mussels are warmed, approximately 5- 7 minutes. Stir occasionally to prevent cheese from sticking to the bottom of the pan.
- Once done, remove from heat and sprinkle with additional cheese. Serve hot as an appetizer or atop pasta as an entrée. Serves 3-4 people
