Easy Ramen Noodles

For the past week or two, I have been craving ramen. When I say ramen, don’t think the 30 cent quick ramen noodles that are packed with tons of sodium. Instead, think of restaurant quality Japanese noodle soup loaded with all of my favorite veggies. Seriously, yum! Unfortunately for me, the nearest ramen eatery is nearly 30 minutes away and there was no way I was taking that hike. So, homemade ramen it is! You will be surprised to know just how easy homemade ramen is. Not to mention, it is super affordable. Follow my recipe below to turn 30 cent ramen packets into an easy meal worth $13.99 or more!

Ramen Noodles

Ramen noodles are available at most places’ groceries are sold. There are various brands across a range of prices. For a budget friendly option, I tend to buy a few packets of the inexpensive instant top ramen packets. Please note, the seasoning  packet will not be needed/used for this recipe.  Ramen noodles are available in both wavy and straight selections. Feel free to use whichever style you prefer.

What should you add to your ramen?

What ever vegetables and meats you want! That is truly the joy of ramen. It’s literally a “whatever rocks your boat” type of dish.

Common toppings: spinach, kale, corn, string beans, green onions, onions, tomatoes, leeks, seawood, eggs, kimchi, fish cakes, sliced pork, sliced chicken. Want the perfect runny egg? Boil a chilled egg for 5 minutes, peel, slice, and serve!

  • In a large pot, heat oil, soy sauce, onions, and garlic cloves over medium- high heat. Allow to cook 5 minutes or until onions translucent.
  • Add broth and water to the large pot. Cover and allow to cook for 10 minutes or until broth boils.
  • Add frozen vegetables, kale,seasoning, green onions, vinegar, and tomato. Cover and allow broth to return to a boil.
  • Add noodles and boil for 5 minutes or until noodles are cooked to preferred tenderness. Remove from heat.
  • Serve in a bowl. Top with halved eggs, sriracha sauce, sliced green onion, or hot sauce.

Notes

Essential Tools:

Measuring spoon: ½ tsp., 1 tsp., 1 Tbsp.
