Looking to jazz up your picnics and al fresco dining? Well, let’s fire up the grill and try this easy Focaccia Grilled Salmon Slider recipe using fresh salmon and 3 simple ingredients.  You don’t need a group to get the grill going, this recipe is made for one but can easily be converted to feed a large party.

Salmon to Use For Salmon Sliders

For your salmon sliders, you want to use high-quality, skinless, and boneless salmon filets. For this recipe, I used fresh salmon from a local grocery store. I recommend you use cuts from a place you trust as being high-quality. 

Best Bread to Use for Salmon Sliders 

The best bread to use for salmon sliders? Focaccia, of course! Focaccia is a soft and slightly chewy Italian flatbread that is often infused with olive oil and herbs, giving it a rich and aromatic taste. Focaccia is extremely flavorful making it a unique addition to perfectly grilled salmon. I used store-bought focaccia but feel free to use homemade ones if you have some handy (lucky you). 

 

What Toppings to Use for Salmon Sliders

You can get as wild as you would like with your salmon slider toppings. I used sliced red onions, avocado slices, mayo, red pepper hummus, homemade mango and corn salsa, and lettuce. Tomatoes, cucumbers, your favorite vegetables, or even a Greek yogurt-based dressing would be mighty tasty! Feel free to add your personal touch and variations to the recipe

  • Preheat the grill to medium-high heat.
  • Season 1/2 pound skinless salmon with 1/4 tsp garlic powder, seasoning salt, and paprika.
  • Place seasoned salmon in deep dish or clean ziploc bag. Completely cover with Italian dressing.
  • Refrigerate salmon and allow to marinate for 30 minutes.
  • Remove salmon from marinade. Discard the remaining used marinade.
  • Place the salmon fillets on lightly oiled grill and cook for about 3-4 minutes per side, or until the salmon is cooked through and flakes easily with a fork. Remove from the grill.
  • Toast the focaccia bread slices on the grill for a minute or two until lightly crispy
  • Assemble the sliders: Spread a dollop of mayo on the bottom half of one of focaccia slices and hummus on the other. Place a piece of grilled salmon on top on the slices, followed by a few lettuce leaves , red onion slices, mango and corn salsa, avocado and any optional toppings.
  • Top with the other half of the focaccia slice to complete the slider.
  • Serve the Focaccia Grilled Salmon Sliders with a side salad or your favorite side dish.
