Sweet Chili Glazed Salmon

Yields: 4 Servings Difficulty: Easy Cook Time: 15 Mins

I love a good quick and easy meal. My Sweet Chili Glazed Salmon recipe is quick to whip up, done in under 20 minutes, and oh so delicious. The perfect balance of sweet and spicy is at your fingertips with this perfect for any occasion recipe.

Salmon

I opted for a boneless and skin on Salmon fillet. I prefer baking my salmon with the skin on to promote even cooking. It also prevents my salmon from prematurely falling apart while moving from pan to plate. This recipe suggest baking your salmon skin side down on top of a parchment paper-lined baking sheet. The parchment paper is great for an easy clean-up and prevents my salmon from sticking to the pan.

Seasoning/ Spices

The glaze is the real star of this recipe. Before I add the glaze, I like to season my fish with a  flavorful but simple seasoning blend. A nice blend of black pepper, seasoning salt, garlic powder, and paprika does the trick. I purposely went easy on the salt, only adding ½ teaspoon. If you tend to like your food a bit more saltier, feel free to add another ½ tsp. of salt.

Before seasoning the fillet, pat the skinless side of the salmon dry with a clean paper towel. Doing so helps remove some of the excess moisture and gives you nice crisper skin. Generously sprinkle the seasoning blend over the skinless side of the salmon. Once the fillet is uniformly covered with the seasonings, carefully pat the spices in to the fish to create somewhat of a dry rub.

The Glaze

The base of this glaze is butter and honey. I like using softened and slightly melted butter. I try to avoid using completely melted butter to keep my glaze from being overly runny. Once the butter and honey is mixed, add the juice of one lime, minced garlic, and red crushed pepper. This recipe has a slight kick but if you’re feeling like you want things a bit more spicy, feel free to add in another ½ tsp. of red crushed peppers. Once the glaze is fully mixed, lather it over the seasoned salmon fillet. Dependent on the size of your fillet you may not need all the glaze. Once the salmon is covered with the glaze, feel free to discard any excess.

Pop the glazed salmon in the oven at 400 and cook for 12-15 minutes. Salmon is ready to eat once it turns a light pinkish hue and the salmon is flaky.

What sides could you eat with Sweet Chili Glazed Salmon?

I served my Sweet Chili Glazed Salmon with roasted parmesan potatoes and roasted bell peppers and onions. I opted for sides that I could pop in the oven along with my salmon for a stress-free meal but feel free to get as creative as you would like.

Wine Pairing for Sweet Chili Glazed Salmon

I paired this dish with a dry and crisp glass of rose. The fruitiness of the wine nicely highlighted the slight spiciness of this dish. A full-bodied Chardonnay or off-dry Riesling would also complement this dish nicely. Try aiming for a medium-acidity wine that won’t overpower the natural flavors of the salmon.
